Individual cut baby backs

Found some individual cut baby backs in the rot pile at the store. Smoked them in the ole MES 30 with apple chips,small charcoal pieces,and hickory pellets. Put smoke on them for only 2 hours at 275. Then I didn't add anything for the next 3 hours at 225. No foil. Sprayed with vinegar first 2 hours every 30 min. Internal was around 200 when I took them out...shoulda took a pic of the rest,but they gone!

Yes sir... Very flavorful and still juicy ribs. You could tell all sides got the smoke and dry rub...I was surprised they didn’t dry out... mock tender steaks next, I suppose.
 
They do look juicy, but they look kind of goldish in color on my screen.

Point for sure

Color was light. Reminded me of pork belly or super juicy pork rinds on steroids. I used a very light coating of rub. Also light smoke. I wanted to taste the pork this go round. Bone pull was nice speckle and not solid white.

Next batch I’m going to foil with butter, brown sugar, and tiger sauce. Foil times to be determined with these individual cuts tho.
