Hi, have company coming in so I'm doing another 3-pack of Costco pork ribs. I have trouble keeping the grill below 300, so at 2:45 I'm giving them a half hour smoke break before I wrap them. Basically same as I did for Memorial Day other than bumping up the allspice a bit and I'm using LizzQ pellet smoker tubes.

Looking good so far, I personally think cooking at 300F is perfectly fine. I do often. Just adjust times.
 
I will have to cut time down! Overdone!
