I got a 20 lb batch of SS going on here too right now. I know yours will come out good, because you were the one of the members here on SMF who taught me to make SS. Mine just went in the smoke, now the wait that is definitely worth it. Hope all is well with you and yours ! Now you need to post up the pics when you are finished.

IT at 147, going to pull and hang at 150.

Took the chubs to an IT of 150, pulled from smoker and hanging now, hit with some cold water to stop the heat between the casing, let em hang they will IT to 152 on their own.
