Howdy All:
Been smok'en on a backyard Kingsford and about a year ago bought a custom trailer unit. I've competed on a team many years ago and wanted to get back into it. My son and I are the team and have competed in about 5 cookoffs here in Texas. I notice there are teams that consistently win and would like to improve my performance. The key word here is consistency. I will be seeking information on obtaining flavor and tenderness in chicken, spare ribs and brisket. I cook on Mesquite and some oak.
