I have a 18.5 WSM and i think for Memmorial Day smoke either on Sat or Sun i am going to do a butt and a Chuckie. I am wondering which should go on top? I am guessing the chuckie? Might be able to put them both on the same grate too depending on the size.

Also, for you WSM users i havent even used my lower grate yet, does it soften the bark on a butt being that close to the water pan?

Haven't used my WSM yet...grrrr...but it should not matter with the chuckie and the butt. I bet you'll have room though for both on one grate though.

Poultry on top of other meat is an issue though. You don't want raw chicken juice running all over your other meat.

I knew the poultry on top thing, and didnt know if that carried over to pork or not. You'll love the WSM by the way. I went from a Chargriller to this and temp control is SO much easier.

Hey HD -- I don't think having pork over beef is a problem at all. But you probably will be able to get both on top -- unless they are mongo size.

I did pick up the WSM on CL -- used it Sunday for the first time -- and you are so right about the temp control. It was a dream! Smoked a chuckie and two boneless turkey breasts -- it all fit on the top rack just fine. I'll be posting some Qview in a bit.

So either way, either rack, I think you'll be just fine.

Both should fit on the top rack no problem. But if they don't you just have to decide.... do you want pork flavored beef, or beef flavored pork? lol.

Personally I prefer beef flavored pork myself, so I do chuckies on top (if I need to).
