I have a Monday through Thursday work week and decided to make some extra money by working festivals and such selling BBQ.\

I have  truck converted for Food sales but its in the shop (trans rebuild)

but i had my first event  and wanted to see if anyone out there has advice for me to make my little business a Success!

Sounds like a fun project!

But did you check with the local health dept. & get the necessary paperwork, insurance, etc?

yup got the insurance and all clear form the health dept .  seems like things are going well so far 
 
Good for you! Looks like a fun hobby and hopefully it is financially rewarding as well (I call it a hobby, but you know what I mean). Doing something you enjoy and getting some money out of it, win-win.
 
It should be a good deal. There's a guy in Edmonton that has a gas grill that he pulls behind a Harley in summer and a pickup the rest of the year. He always sets up in the industrial area--same place every day. Sells smokies and dogs. He does a good business. Health regs require him to unhook before cooking.

I have been doing pulled pork , ribs. but the  sausage thing sounds good quicker cook time  and all .....but the first day I tried this I ran out of Pulled pork 1 1/2 hours in to lunch . i was thinking about like chicken drums sticks if i can make the right recipe. i learned the more it can be hand held and the person walk around while eating the better.
 
Try pulled chicken thighs. Theyre fattier so they can handle higher heat, thus quicker cook time, and not dry out. Cook in about an hour.

I made about two pounds worth a few days ago, used a rub 1/3 cup pepper, 1/4 cup salt, 2 tbso brown sugar, 1 tbsp chili powder, 1 tbsp garlic powder, and tbsp onion powder, 1 tsp paprika. Rub generously and coat with olive oil to help crisp the skin. So juicy you don't need BBQ sauce, maybe a light accent sauce, but nothing too flavorful or it'll mask the amazing chicken
