So, i fell asleep last night, and forgot to set an alarm for my brisket. I woke up at4:30, and the temperature in my WSM was100°. I restarted the fire. Will the meat be ok? The temperature of the meat was also about100°. When i went to bed, it was about168,° . Thanks
Yes..... At 168F, the bacteria had been killed.. and there wasn't enough time for it to "restart" again, with the assurance of re-stoking the fire to kill any bacteria that formed on the outside...
Get the smoker temp back up to 200+ to finish the cook and smoke....
Theoretically, whole muscle meats are sterile on the inside... so once the meat outer surface had reached 160 ish, all was good...
