I need a Chicken and Sun Dried Tomato recipe

Any body willing to help me with this? I need to make the wife some chicken sausages because she cant eat pork.

I have not had much luck finding a chicken recipe.....I do have sheep casings I can use for her.

I did make one change in the recipe I reduced the oregano to 1-tbsp oregano

Chicken thighs were on sale for  .55/lb  I bought about 10 packages.  

I have to take the bones out but, should I leave skins on remove them?

When I made mine,I left a lot of the skin on.
