I have never been a fan of BBQ sauce... I like to taste the meat, and the smoke, and I have never found a sauce that doesn't just cover that up. This weekend I made some of my own and it was great.
I was making some boneless country style ribs (butt that is fileted and cut. I put the rub on it at about 7 am Sunday, and into the smoke at 10:00 put them in a pan and foiled it (with a splash of diet Dr. Pepper) @ 1:00 took them out of the foil @ 3:00, and back on the smoke for another 1 1/2 hours.
When I came back in with the pan of juices from the foiling I had an idea. I reduced some Diet Dr. Pepper, added some rub to it, added about 1 tablespoon of BBQ sauce, and set it aside. Then I took all the juices from the foil pan, and reduced it down by about half, added the other mix and let it simmer until the ribs were done.
This sauce is smokey, and it tastes just like the ribs do.
Unfortunately it is not something I can reproduce without making more ribs...wait I mean fortunately in order to make more, it means I am going to have to go get some more ribs!!!
