Doin some pulled pork an sides fer a soldier's shippin out party. Well, decided I'd get a early start this mornin an smoke the pork butts. The party is tammarraw an figure I can just rewarm the pork an do the beans an such fresh.

Bought two butts an a picnic, well guess what? The picnic is bad! It stinks ta high heavin! The longer it was cookin the worse it was gettin! It's sittin on the porch runnin the dogs off.

Luckily I got a early start an found out, pulled a replacement frozen butt outa the freezer, got it thawed out an gettin ready ta put it on the smoker now. Here goes a all nighter! Meat manager gonna get a earfull to! I done the party on the cheap cause hey, the feller be servin an leavin home, but I hadn't counted on a stinky picnic, If ya figure time, materials an such, this perty much ate the profits. Oh well, least ways there gonna be food tammarraw.

Was the butt slimy or green or both?  Was it just spoiled pork, or was the feel of it ok but the meat itself have a bad odor?  Did it smell when you first approached it like you knew 'dang, that sucker stinks!' or only after it got cooking?

Pops, come in outa the cryovac it had a bit of a off smell, but many times they do, rinsed it an let it set an freshened right up.

No slime er color outa the ordinary, but the more I cooked it, the worse it was a stinkin!  Got ta the point it had ta go!  Must be awfull stinky, cause ain't nothin touched it all night! 

Well, we made it ta 165, one wicked thunderstorm bout 2 ish this morning, big lightinin, lots a real big thunder, nough ta scare the comuppits outa a half drunk hillbilly(specially if yer doozen) !

Got some cat naps in the shop command chair, had a few iced raisin jacks (well, quite a few!) listened ta the squeak box an shot rocks at the nieghbors dog what wouldn't shut up!

Yeah, Trident 1 did her thing just fine, gonna be a fine lookin butt when it's all done.

I think I better get a bit a real sleep, got beans ta cook here real soon!
