Still had some supply in the freezer of both aged rib steak and tederloin but the Easter deals were too good to pass.

Aprox 8lbs whole tenderloin and 25lbs rib roast. I will age the rib.

Lost some of the enthusiasm....the tenderloin was badly butchered. Couldn't get all the steaks one should. Ended up with more meat for stir fry. Still....not a bad day.
Seeing the poor butchering job i decided to pass on steak tartare from this tender.

Not sure if all shops work the same but these guys, when i told them i am buying the whole rib roast untrimmed, they knocked off almost 25%. On top of what i thought was already a good price.

Something to keep in mind when buying whole roasts for aging.
