I know I have been absent from this page over the last few years. Between the new job and kids getting older and being active in sports and local clubs I have all but stopped catering, but still try to find time to smoke meat and make sausage. We moved over a year and a half ago to some acreage and I have a small shop that I am slowly trying to get organized and finally get to make a curing room.

My kids both got involved in 4-H after our move and we have met some really great people. With my teaching background and love of cooking I was strong armed into starting a new 4-H group this year, Cooking: Sausage and Meat Curing. We are a small group this first year of about 8 kids. We had our first meeting this month and we made a Jimmie Dean Copycat uncased sage breakfast sausage. Next month we will be doing some type of cased brat. I wanted to acknowledge Scarbelly because if I had not had a few conversation with him about him and his wife involvement with 4-H I would have never thought of volunteering. I had a conversation with Scarbelly’s wife before I volunteered and she was great offering up any of their old material to assist my new adventure. Hoping to become active on the page again
 
Welcome back Brother... great to hear ya doing the 4-H thing ... Scarbelly is smiling :biggrin: .... We just did a BBQ Comp at our local county fair last weekend... They also have a Comp for 4-H set up right beside us.. I went over and talked to a few of em... they had more competitors this than last (first year for them) ... They all seemed to enjoy it ... winners got a new Weber Smokey Joe ....
