Wife made this for the first time yesterday.
9x13 pan dissapeared in no time.
Ingrediants;
2-boxes jiffy cornbread mix
2-can cream style corn
1-can whole kernel corn (drained)
2-cups grated cheddar cheese
2-eggs
1- jalapeno diced fine(seeded and veins removed) optional.
1- 1lb chub jimmy dean sausage
1lb- smoked sausage diced
8-slices bacon
1/2 yellow onion diced fine
Directions:
Brown JD sausage and smoked sausage and set aside.
Fry bacon and set aside( crumble bacon after it cools)
Mix all the other ingrediant together.
After the meat has cooled mix it in w/ the cornbread batter
( If mixture seems to dry you can add a little milk to get desired consistency)
grease a 9x13 baking dish and pour the mixture into the pan
Bake @350° until done.
this will not dry out like a plain cornbread so don't try to keep cooking till it dries out. It will firm up when it cools a bit.
Cooking time is between 45 min to 1 hour depending on your oven.
If you like it spicy you can use the hot sausage.
