Hi Everybody!
Ive been reading threads on this site for awhile now. It seems every google search I do on smoking turns up a conversation from this site. I've found some great information and tips, so why not join!

I'm from Wisconsin and my husband is an avid hunter. Last year, we decided to buy some equipment that would expand what we could make with the bear and deer my husand and father in law keep bringing home. It's been an adventure so far.

First lesson I've leared here...modify my smoker. We have a smoke hollow 30" 30164EM. My first smoke was 10lbs. of bear sausages. Recipe came from here, but the smoker does not do cold or low smoke well. I had to constantly open the door to drop the temp down. Still came out delicious, but this model defintely could benefit from extra ventilation.
