Howdy all, newbie here, but not new to smoking. Moved from Texas to California and caught the smoke bug when I couldn't find a beef rib that met my expectations. Messed up a few ribs along the way, but fell in love with smoking things. Now I am in Washington state and getting used to smoking in the cold and rain. (Anyone got a good suggestion for a canopy? :)) I was lucky enough to befriend another woman here who also loves smoking things so we've been experimenting with brines and cuts and just generally having a good time by the pit.

I have a weber performer (just got this one off the side of the road and cleaned it up about 2 weeks ago), a kamado joe II, an old new braunfels offset, and a joe jr (for camping). Mainly smoke beef and birds, but also smoke cheese, nuts and salt. I'd like to smoke more fish and hope to learn a ton from y'all.

@DRKsmoking, I don't think I could ever pump out food for sale, but it's tons of fun to cook for people in my orbit. I live for that eyes closed moment.

@Fueling Around, I would imagine y'all have tons of good seafood in Florida! Not the case?

Yes, there is seafood down here. Grouper, conch, and gulf shrimp top my list.
I miss fresh dungeness crab, pacific red snapper, and razor clam that are prohibitively expensive down here.
