Hello all, I'm from Princeton Texas just outside of Dallas, I've been cooking for several years on various offset cookers I have owned. I have a large homebuilt smoker that I am using and adding on to till I get it just right. It cooks well and holds heat well. I mainly cook for friends and co-workers, I'm interested in doing some cook-offs, more to see how I compare to others and just get some new insights into cooking. My mother is from Memphis and I have spent my 47 yrs in Texas, so BBQ has always been a major food group in my family... I look forward to learning from and sharing with this group...
