baked beans from dried beans

Who has been starting with died beans? My prepper garden has me in beans from last year, but I just planted 6# of two different types and this winter I'm likely to have over 100# of beans for me and others. Need to start doing cooking research for recipes and trying canning them.

Looking for ideas, recipe and advice
 
Chef jimmyj posted a secret about baked beans from dried beans years ago. 1/2tsp of baking soda per pound of dried beans. this will soften the skin on the beans when cooking.
 
I used to soak overnight. Now. I just use an instant pot.
3 cups of water per pound of beans. And a tsp of salt per pound to help soften the skins.
Or 1/2 tsp of baking soda per pound
Set on high pressure. And cook for up to 40 minutes depending on type of bean.
Black beans 15–20 min
Pinto, kidney, navy 25–30 min
Red kidney beans 35–40 min

My wife now uses the Instant Pot too. Time saver to say the least.
 
I use the IP, just the first default cycle for beans then dump that water and go about cooking to make the final dish. Fresh water/broth whatever, no need to soak, or at least when you forget to soak you can still go ahead and cook the dish.
 
FYI, soaking does increase the nutrients in the beans and it lowers the phitates in the beans which are anti-nutrients...
