Howdy from South Dakota

  1. Got a MES last year and had a blast smoking Brisket, a few chickens, and a couple turkeys before moving from Kansas to South Dakota. Going to throw a 10lb. brisket in tomorrow, and I am excited to see how it comes out. I am really looking forward to smoking a bunch of fish, if anyone has any suggestions to make that a great experience let me know.

    Best way I can think of is to research using the search engine the week before you cook and take some notes, in the beginning anyway.  Tha search engine is your friend, it knows your smoker inside and out, it knows the meat, it even know the area of the world you are in and can help to very specific questions.  Talk to a Guru, make 'em you friends. They are the folks running around with the moderator or OTBS (Order of the Thin Blue Smoke) tags by there names. They are total awesome sauce!

    Man did not learn to cook over night and smoking is no exception. Look in the Search engine for tutorials with Q-view. These are generally pretty good and me, I like pictures. But don't forget about those notes. I can never fine the same thing twice when I am looking. Notes should be about the meat, how you prepare how you cook how you finish, and what you liked and disliked. Then you can research again what you disliked and see what changes might be applicable to make it better. Be a dang shame to hit that perfect smoke and in you excitement forget what you did.

    The Guru's will no doubt show up in the AM and help with your getting settled in.

    Glad you joined the group. The search bar at the top of any page is your best friend.
    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
    and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
    We are all smoke junkies here and we have to get our fix. If you have questions Post it
    and you will probably get 10 replies with 11 different answers. That is because their
    are so many different ways to make great Q We all have our own taste.

    We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a kindle, go to the main SMF page and click the Mobile button. Will make the uploads a bit faster too.

    If you didn't read the "Terms of Service" notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums and some guidelines of how to interact within the forums. Off site links are not allowed here at SMF per Jeff. Not that you have done anything wrong....just a little bit of FYI for new members!
