Hello all. I'm new here, but have been lurking for a few days. This forum is a wealth of information and I've been soaking it up like a sponge! I recently upgraded my Big Chief smoker that has been used exclusively for salmon for the past 11 years. My wife bought me a Masterbuilt 40 electric smoker the other day and I cant wait to start using it for other meats. I've already got an A-MAZE-N Pellet Smoker on order along with some Pitmaster dust. I'd like to try my hand at smoking some cheeses.

I saw something mentioned about a Masterbuilt retrofit kit (?) and I need to do more research on that. Not sure if its something I need or not.

Anyway, I just wanted to say hi and thanks for having this resource!

Hello and welcome to SMF! The MES is great for cold smoking when paired with the AMNPS. Did you get the AMNPS and dust or pellets? 

The retrofit kit is a larger chip tray, if you want it just contact Masterbuilt and they should ship it to you. I haven't upgraded because with the AMAZEN products, I just didn't feel the need for it.
