How to add ECA ?

I see where it states to add it just before you stuff but how do you add it? Mix in water or just sprinkle it in and mix it?

Do not mix with water. Sprinkle over meat paste and gently fold in. Mix lighltly for about a minute by hand, stuff, then smoke immediately. Can not let it sit overnight.

Just sprinkle over the meat paste and mix in. The idea is to not let it set in the meat mixture for any extended time or the capsules will start to release. You don’t want that to happen until the cooking process begins.
