How long should it take?

Two 8 Lb butts on my 22 WSM at 250.
7 hours? I know there is a lot of variables. I usually wrap at 170 and back on until 205 give or take..
 
At a range of 250-275°F, you can figure 1.5 hours per pound on a Butt. I would add 2 hours to CYA 'cause stuff happens! So 14 hours, give or take...When the IT is around 205°F, the bone is loose and a probe slides in with no resistance, the meat is done. You only need a 30 minute rest on the counter, tented with foil, to cool until able to handle. OR if the meat is done early, double wrap in foil and towels, place in a cooler and it will hold hot about 5 hours longer...JJ

I like to run my smoker at 225 or less for butts. To me it seems like the longer & slower they cook the better they are. At 215 - 225 an 8 lb. butt would take about 18 hours. Foiling will get them done sooner.

Ok here is the update: 2-8lb butts ( done Jeffs Dr Pepper receipe) on the 22 WSM using blue kings ford
With cherry chunks at 250. It took 11 hours to get to 205 .. Now just resting waiting for dinner
