How long can you brine corned beef nitrate/nitrite/saltpeter free without it going bad?

They got half the Male mice fat on Pasta and the other half fat on Bacon and Kielbasa....Then then let them chase some much younger and hotter skinny Female mice around until they dropped...JJ
 
I hope it is not being brined too long and that it will be hot smoked.

Being more afraid of the small amount of nitrite/nitrate we use than one is of botulism poisoning is a mystery to me?  But I don't have to eat it.
