So I found myself with 3.5 lbs of leftover pork butt from a run of brats and a new hank of 22-24 sheep casings. Sounds like hot dog time to me!

I went with a Marianski recipe that you can find here.
https://www.meatsandsausages.com/sausage-recipes/hotdog

It's a beef and pork recipe but I did straight pork, cause that's what I had. I think it would be better with the added beef, but this is real good with just the pork.

Did a triple grind through a small plate (4.5mm) then stuffed and linked about 7” long. I did have one small blowout while linking but I left it.

Got a little carried away with the smoke, they went 3 hours at around 130° then finished in a 170° water bath.

Pan fried some along with some brats for dinner,

Thanks for looking, I haven't been post much mainly cause I haven't made anything different in a long time. Ill try to improve on that in the future.

just throwing out there, a place not to far from me a butcher of sorts make their own hot dogs among other things. the best thing i have gotten from them is their jalapeno cheddar dogs. just an idea for next time.

danmcg, your hot dogs look very nice! Beautiful color also... Like!
Any chance you can share a pick(s) with a sliced dog? Or, let's say a "bite"? I am just wondering how the texture looks like with grinding the meat three times though 4.5 mm plate. Were they juicy? Thanks!

WOW ! Dan those look fantastic . Love the Marianski recipies .
GREAT work there .

Yeah no problem, I'll probably be eating one soon, and I'll snap a couple.
Ha sooner than I thought .

and a bit one, I think they would look juicer if I warmed them up. but they are great cold!

I still haven't ventured into the sausage and dog making part of smoking, but when I do I hope they come out similar to yours. Great looking dogs.

Point for sure
