Been seeing some great looking wings here lately and just had to have some!


Put the wings in a gallon baggie with EVOO, Jeffs rub, and some extra cayenne.


All shook up and into the fridge till smoke time!

Time to prep the ABTs. This is where things get a little weird!


Used a couple of jalapenos and a few sweet peppers.


Out of bacon.(Gasp!) No Prosciutto, so I wrapped in Boars Head Tavern Ham. Hey, When faced with adversity we must carry on!

More pics coming at smoke time. Hey, that's only 30 minutes! Cool! Gotta go fire up the MES and AMNPS.
 
Looking good! The ham should be interesting as well!
 
Hour and a half in, starting to get some color on them now, amnps still cranking it out!

Just checked with the Thermapen, they're done! Preheating the grill now to crisp them up.
Will get some better pics when I pull them out.

I love smoked wings.    I'd have to send the wife after some bacon though.  Its that important.  :-)    Or thaw some homemade out really quick.

They turned out incredible! Here's a before and after pic.
The meat was moist and very tender, skin nice and crispy!
My wife proclaimed them the best she's ever had, (she's a very good wife!)
The ABTs? Not so much. The ham didn't get crispy and was kinda chewy. Oh well, live and learn!
 
Thanks for the after pics. I didn't want to have to remind you about the starving kids is china. They look great. Nice job!
