I always see these Jalapeño/Cheddar sausage threads that really make my mouth water, thought I would try a batch myself.

Took this...


And made this


Elk and some fresh pork fat


Grind one


Witt’s Hot Italian and some Cure #1



Grind Two


Refrigerated the grind mixed with Witt’s Hot Italian overnight

This morning...

Jalapeño, Garlic, Onion


Chopped up


Mixed up


Loaded up


I used Hog cases for this



Starting to dry nicley in the MES

I’ll use the AMPS with some Pecan

Very nice indeed! I'm starting to dehydrate my peppers-onions etc before adding, read it somewhere and like the results thus far. I feel I get a more complete mix. Can't wait to see more.

those look great good job what to make next how many elks did you get LOL hey Summer sausage for for gift packages are always good this time of the yr or some slim jims that what i did with my last elks

My dog just ate a whole opened vac package of this and half a cheese ball off the snack table when we were out of the room!
