The UMAi is looking good and pulling away from the meat. (This is normal)

Needs a few weeks yet in fridge.

UMAi paprika salami going good. Bag release from the meat is normal.

When i cant hang in the fridge i use a Qmatz or frogmat on the rack so i dont get rack marks in the chubs.

As the bag pulls away from the meat, and the meat looses water and shrinks, what gases fill the void? CO2? Air?

Any air or gas (if you get any) :eek: will be released thru the bag. Let the bag pull away and do its thing

Got some white mold on top of a couple. No biggies i cut the ends off anyways.
