Hot dog recipe suggestions

I want to start learning to make deer dogs, so I need some suggestions to run past the wife and M-i-L for recipes. Anyone have any hot dog recipes they have tried and like?

Also, what percentage of fat are you using and how important is emulsifying the meat?
 
I was thinking 5# deer meat, 3# pork butt and 2# pork fat which would kind of leave it around 28% fat or 25% fat of the pork but is a little leaner. It I did 2# pork butt to 3# fat it sends the ration to 36% and I didn't know if that is too high?

I have that industrial grade mixer and drill and it did a really good smearing of the copy of Dico's Mettwurst because of the extra moisture in it. I think it might so the same for hot dogs.
 
I really can't help you with the meat percentages, but I have been using TheSausageMaker hot dog blend, & we really like it. I don't emulsify either, just a double grind with the last grind thru my smallest plate. Then I use sheep casings.

Wow, I like watching him and wanted to make his thuringer. I wished he made regular recipes and not using the spice kits as a base. .

I was thinking about 30% fat as sausage is good that way. 50% seems very high. Maybe I'll have to try 30% and 50% and see what happens.
 
I think hotdogs he mostly uses Jowl stuff 50% , but it probably has meat in it too. I think his page has the recipe for some stuff. Not sure how many real recipes he has.

I'm not on board with the German guy... 50% fat is too much. 30% is good. Anymore than that they will be greasy . been there.... done that.
