I made some jerky tonight and it turned out excellent. I used LEM seasoning, which is a wet seasoning, and it is excellent. The only problem I had was that there were areas that dried muck quicker than others. The right side was way more done than the left. I rotated the racks and that helped but it is a pain that the heat does not distribute more evenly. I had the heat at 160 for the first 3 hours and then went to 170. I had the vent wide open and the door open about 1/4 inch for the first two hours to allow the humidity to escape. Then I put the vent at 1/2, which is my normal setting. What do you think? Has anyone ever mounted a fan inside the unit to better distribute the heat? Any opinions would be appreciated. Thank you.
