Just went out and bought myself a Christmas present. A ceramic smoker of all things a Browning cheaper that most but still a Ceramic Komodo style. Assembly started on the stand and will finish soon.

Since I live in the almost frozen northlands of Massachusetts, I am interesting in it's use in the winter since spring is a long ways off.

What else will I need to purchase Got lump charcoal and some flavored wood chips. Plan on a Pizza plate but what will I need to do in order for indirect smoking of Briskets and pork ribs.

Well I got it all assembled and decided to a small test fire to help set/condition the ceramic, I have oak chunks that came off of my splitter that I use as kindling for a fireplace insert. so why not burn that as a start. Well as expected I got plenty of smoke but the temp gauge on the lid never got over 150 deg F. I have both air inlet and exhaust through the lid both wide open for max air flow. This should allow for maximum temp. When I look in the air inlet I can see a bed of coals glowing red. what am I missing?
