Hey, it's that time again... fancy drinks, often made with eggs...
To insure your health this season, think about pasteurizing those eggs..
I just put 8 eggs in my sous vide... I've done this before and they come out just fine...
135F for 2 hours... I set them in the SV and set the timer for 3 hours.. I'm adjusting for the water to come up to temp.. SS wire colander with a wire bale handle... works good....

Here is what an "over cooked" SV egg looks like.... I fell asleep and they cooked for 5 1/2 hours... No problem... cooked up perfectly... whites were a little "whiter" than normal... normal is fairly clear with wisp of white throughout....

..A little more opaque than normal....

Perfect yolk and it's safe to eat...
The eggs flip easier due to the "firmer"
white...
