Injected a pork butt to make ham. Just going with water for the medium this time. I just not crazy about veg broth. I did use chicken broth once and was OK but I think water will get the job done. Got done injected and picked up to put into bag and slipped. Almost fell into sink full of soapy water and about spilled the remaining cure mixture in the alum pan I was using. Don't know how butt I recovered. This could of been a disaster! Plan on freezing after cured to use for Christmas.

That bag next to it is some patties thawing that I make my white castles with. White Castles for dinner. I sure wish they would go nation wide.
