Mrs. Red, my beautiful wife (who in my eyes is a supermodel) texted this very picture (meme?) to me yesterday!

I just laughed and laughed!  Because she knows I'd smoke the brisket...fat side up!

What I've got is better than any brisket. Hot, tender, tasty, wonderful smooth bark, but no smoke ring.
