I have been smoking for a few years. It started with a little chief, then a big chief, and then a weird little crock pot smoker that my wife got me at Walmart. For the last 2 years I have been doing chickens, turkeys, salmon, venison, and my family's favorite  - cold smoking cheese. A few at first, and now about 200 lbs of cheese for all of my family and friends. I was using my little chief, 15' of metal dryer hose, and a big cardboard box.

A friend was getting rid of an old 50's style fridge a year ago, and it has been sitting in my garage waiting for me to build a smoker. I am finally going to do it. I have lurked around on this forum for a while now and yesterday I ordered the Auber Instruments WSD-1202CPH , with the wall mount (http://tinyurl.com/2ulnve4 ). I got a hot plate at Walmart, and a 8” cast iron pan to hold the chips.

I'll post pictures when I start construction this weekend.

I live in Kuna, Idaho, just outside of Boise. Besides smoking, I make my own beer, wine and mead, as well as homemade candy. I do most of the cooking in my family, just because I love doing it so much. I grow a large garden with mostly peppers and tomatoes, and hunt deer and elk every year.

Welcome Gus! You've come to the right place if have any questions. Tons of nice people that are willing to help. No matter what your question might be someone here has some experience and will be willing to help out.

First off Welcome Gus to SMF. You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.
