I have used a number of smokers over the years and prefer a cool smoke to a hot one although when travelling choice is limited and use a portable smoker and bbq to slow down the heat. my first smoker was an old upright draught drier with the motor removed and a pipe added running to the fire box behind, it was a beaut and got used mainly for mullet and kahawai, the occasional eel and WHY.. 

next i graduated to a metal locker again with slow smoke and fire behind, this one had some brick work support lifting it up off the ground, by now i was smoking chooks, oysters, mussels along with the fish, i love smoked roe and right now the mullet are full of it so nom nom nom. 

i live in Northland New Zealand although originally from Auckland, i love cooking which is handy as, in case you didn't notice, i love food. Experimenting is something i do a lot, although occasionally it can be a regrettable although humorous adventure it is always worth it. thats about it for a quick gidday nice to be here.
