Hi from New Zealand

Just looking to get into smoking meat/s and fish. I plan to build a small-ish cedar cabinet, and looking for ideas for build and smoke source. Mid winter here now, so would make a great winter project.

Herb Rubbed Roasted Rack of Lamb with Red Currant Balsamic Reduction.

So the boy has been craving some lamb chops so made that happen tonight…. Started off with a double pack imported from New Zealand….. Very nice pair of chops….. Rubbed sow with Dijon, salt, kinders, and fresh chopped herbs…. Searing the fat side on the Weber…. More searing to get good...
