Hi All
I live in Maine, have a small farm and love pork fat! I love ukranian/russian smoked fat back! American bacon has too much meat in it. I remember (when I lived in russia) that we would throw chicken breast in the trash (to the dog) and eat leg quaters (much tastier), also pork chops were so much more expensive then beef steaks! WE ate a lot of fat and didn't even come close to the size the average american is on fat -free food.
I don't like fat-free food. I eat a lot of fat (but only fat fish like salmon, raw porkfat and butter also raw milk). I teach nutrition at local universities (but only the staff that is approved for teaching, like the value of soy protein and fat-free sugar-loaded food) and like my food to be different and close to paleo diet. I'm fit and trim, not overweight and I think it's because I eat a lot of fat (but only natural, not fried (that creates cancer) and not artificial fat (like transfats).
I hope I can learn how to make smoked fatback.
I'm glad to find a community that appreciates good food.
