Happy holidays to all! It's great cold-smoking time here in Dallas.
I've bounced on and off this forum for a while. Stuck at home for a couple of months after major spine surgery. Need some good info on smokers and smoking/ processing/ canning/ pickling etc.
I love smoking all types of meat products. I am an avid hunter and saltwater fisherman. Got a mighty fine Pecan smoked fish recipe I'll post.
Love cooking outdoors for folks while at the hunting lease. Enjoy pickling and fermenting foods while at home. Home brewer too, but after this dang surgery who knows how long it'll be.
My vertical smoker's firebox rotted out (totally my fault, grrr) so I'll be looking for ideas to remedy that situation.
Hope to learn a bundle of info from everyone!
