Hey everybody!

Just wanted to introduce myself as a new member.

Stumbled on this forum somehow a couple of days ago and spent most of the next 24 hours trying to catch up on what I had missed all this time (I still didn’t).

I’ve been hooked on BBQ since a stint in Birmingham many years ago, and I still dream of Tuscaloosa ribs and Milo’s Sweet Tea.  Started out with charcoal on an ECB, then added an electric version and a propane one before finally moving up to a Cookshack SM08, which has done me proud. People rave about my smoked turkey, my Candy Apple Butt is legendary in these parts, and the 20 lbs of pastrami I did a couple of weeks ago is down to nibbles.

The only problem I’ve had with the Cookshack is cold smoking. I started playing around with smoke generators, and while I was looking for a box to use, came across a ME30 floor sample at Lowe’s for a real sweet price. Now, after reading this forum, I picked up an AMNPS and I’m tempted to try them for my hot smoking, too, using the MES 30 for heat and the AMNPS for the smoke.

All that has to wait until my new BBQ center is finished, which hopefully will be in the next few days (just got the tile for the countertop cut this morning).


Anyway, glad I found this group, especially since there seems to be a few others afflicted with “mod madness” in the bunch. Know I’ll get a lot out of it and, hopefully, maybe even contribute a little bit.

Just a crazy idea I had once. I inject a pork butt with apple juice and smoke it with apple wood, but the real secret is putting ground up cinammon candies in the rub instead of sugar. No one has ever recognized it, but everyone says there's something special about them that they just can't put their finger on.
