Hey all!

I'm Steven from Florida. I have never smoked anything before and am planning on trying tomorrow on an ECB. Browsed the sight for a bit to try and make sure tomorrow is not a total failure lol. Any tips or tricks would be appreciated. I did a couple of things that I could find on here like drilling the holes in the charcoal pan and getting a grate for the charcoal. 

I just graduated college and played rugby all 5 years for my school. Broke my wrist in my last game ever for them so I have some down time and smoking seems to be my new hobby. Always enjoyed eating it so I wanted to learn how to make it.

Our little town of Fallbrook is the home of the reigning national  champs in HS Girls Sevens.  Cute little girls that run like a cheetah and are without fear. 
 
Scarbelly, that's awesome about the girls team, some of them are tougher than a lot of people would think lol. I'll be playing 7's when my cast comes off and I get my strength back. And excitingly rugby 7's is back in the Olympics!

That is one tough sport - and will be exciting to watch in the Olympics 
 
Welcome Steven!  The people here are totally awesome in helping you with your new obsession.  I too have an ECB and I just want to tell you that until you do all the mods suggested on the site, be prepared to babysit a bit.  But it is exciting once you have a finished meat.

If you have problems with getting higher temps, try using playbox sand instead of water. It will get you higher and more consistent temps, especially during cooler weather.  Also, the temp gauge that came with the smoker is crap. Look for a new one at Lowes or Home Depot. And buy that digital temp gauge probe. It will become your best friend.

There's alot to be learned from theses folks from recipes to techniques about smoking. I'm near UNF on beach Blvd. Grew up in Cocoa Beach and came up here for school. I think my biggest concern right now is how I'm going to add charcoal and if the pan gets too full of ashes I won't know what to do. I couldn't find a grate yesterday for the bottom of my charcoal pan so I got a foil baking pan and put a bunch of holes in it to see if that'll at least do for one session.
