Hey everybody,
My name is Dave and I live in Northern California. I am new to smoking and got interested in it primarily due to a "Ribs" book that my wife got me for Christmas. After reading through the recipes and screwing around with a smoker box on my gas grill, it became pretty obvious that if I wanted to make really good ribs -- and enjoy the process of tending the fire -- I needed to get a smoker. I just got a Brinkmann 40" Smoke N' Pit and cured it this weekend. I discovered -- as another user pointed out in this forum -- that the included charcoal grate is crap and was warped beyond belief after the first use.
The gas grill is nice and convenient for quick meals but I do enjoy the process of lighing and tending a fire. And I like to eat flavorful meats so I figure that smoking meat will make a nice hobby.
