Hexclad Pan Review, Real World Real Time - Lots of Pictures!

I was a bit worried these where somehow different but they seem to be the right ones. They come tomorrow. I will look back on how to season them. I recently ruined my beloved 10" and 12" red ones I been using for a few years now. Forgot to turn burners off even though where on low trashed the pans.
When I was doing my due diligence On these I did see the discrepancy of the old 500f vs the new 900f ratings. It looks like all the newer pans have hit the marketplace everywhere. Alot of times it was posted, and I think they left it out of the descriptors so not to "get caught" on whoever had older sets to sell. It looks like they all say 900f now.

Brian its more of a treatment vs season. It only takes about 5-6 mins. Hand wash them with dish soap and dry. Put on a medium burner and then put a 1 tbsp of oil in them and wipe it around with a paper towel. Let the pan heat up for 2-3 minutes, then just wipe out and you are ready to go! Yes, the amazons are the right ones. We actually got our single pan on a flash sale vs the HC web page.

I know I only had couple days but loving these things. Did scrabble eggs this morning and there was nothing left to wipe out. Super slick. They take low heat and heat up fast. Next I need to sear with them. Why did I wait so long? Amazon still has for $319 if anyone on the fence. Thanks Civil. I think it was you that talked me into the carbon steel pans years ago. I dont have room for everything so going to take those out and put them up for now.

I now have two HC pieces. Their flat round griddle and the 12" pan. Love how evenly they cook. Nothing sticks and clean up is a breeze. What a pleasure, well worth the price.
The 12(s)” are our fav and we use the crap out of them!

Having done a bit of cooking over the holidays, I can say that these things live up to the hype.
The one thing that I really like is not having to crank the elements to get the pans hot. My burners go up to 8 but I only need 4.5 ish to get it hot to sear. I added some butter the other day to the pan and in about 2 mins it was brown butter. Really enjoying cooking on them so far. Always hand washed. Hope they last forever.

For anything that's on the light side I've hand washed but for some more serious frying I've wiped out then ran in the dishwasher on the top shelf.
