the pans are only rated for the 500F mark and not the new 900F.
I certainly get that . I was the same when looking . I mean you want the latest version , but I got to thinking " I never cook higher than 450 / 500 " . Certainly not 8 or 9 hundred .

True.
I dont cook in the ovens at those temps either, but im sure the pans get hot when on the stove and may approach those temps underneath. Am I thinking about that wrong? Maybe.

There ya go . Great point . I didn't think of it like that , but I think you got it . I was looking at some of the HK branded pans because they were way cheaper . Comments were " not for high heat searing " on some of them . What ? That was the end of that .

The underneath is anodized so it will stand up to the open flame, the inside surface is the 500-degree part. I have 18K BTU burners and I sear the crap out of the 500-degree versions. I also put them in the oven at 375-450 and have had no issues at all.

From a safety stand point....searing above 450 for the inside surface is a no-no as the oil will be at flash point and a flash fire. A dry pan at 500 degrees is screaming HOT!
 
Finally showed up today . I was starting to wonder , because it should no activity on the website .

Anyway , question for you guys .
The 12" skillet has a bag , the pot and the lid for the pot each have a bag , but the 12" lid ,, no bag .
Just wondering if you sets all have storage bags for lids and the pots / skillets ?
I'm gonna contact them , but he's home from work didn't want him to see me on the HexClad page .

BTW , that 3 qt. sauce pot is heavy . He'll get good use out of that . He makes some really good sauces .
FYI, I went to buy this same bundle (the wife wants another 12-inch fry) so I could test and a have new version fry and pot but they out of stock, they are not back in stock so I'm going to pull the trigger to test them out!
 
As much as I hate paying that much I looking at the Mothers Day sale. The Family Favorites Set shows the pan set in the picture but they not listed in the included? It is about $1000 right now.

Been thinking about this , for no real reason . Was thinking maybe the new 900 degree temps is for going under the broiler ?

I had to laugh the other day . After wondering about the darn bags . He had the 10" wok out to cook down some onions ( he makes a scratch onion dip ) When he was cleaning up He said " I should just get rid of this stupid bag " Lol .

No Mothers Day sale up in Canada yet. Hope we get one and I may pull the trigger.

I emailed them today asking why it says up to 500F and on another page says 900F, this was the reply.
I pressed the question again in another way and got the second reply.

Thanks for sharing! 900 degrees is crazy hot and likely could cause issues with the handle rivets and such if you did that on a regular basis.....

Just food for thought above about 850 degrees starts affecting the microstructure of many steels so 900 would be an upper limit for that as well....ie 900 degrees is still in the grain refinement temp range for properly pre heat treatment process for knife making.........

Just got an email with Mother’s Day sales.
No price reductions. They have 2 sets where they added a piece for free.
Of course the only set I’m interested in is the same price as before with no extras.
Still on the fence.

For me , it still has to make sense .
Stove filled up with my 1986 Revere Ware . Housewarming gift when I bought my first house at
25 , 40 years ago . I'll never NEED anything else .
Want would be a different thing .

Unless you need a full set , put some thought into what you cook with the most .
A 10 and 12 inch skillet with lids would serve me the most . Could always add to it later .

This is good advice. The fry pan set is a great place to start, but if you want a full set that one will cover you

Those Revere Ware pans are work horses!!! I have one in my camp box.

Yup . I would like to have a quality non stick skillet for a quick sear . The cast iron takes to long to heat , and is often uneven .
The Revere isn't non stick without oil . Can't cook eggs in them , even with a bunch of butter .
Also , can't transfer to the oven . Originally advertised as such , but the handles fail above 300 after multiple cooks .

I did find a 12" at the Goodwill . 1968 production with the copper bottom .

Really even heat too . Not much oil needed . Sits nice and flat on the burner .

Like eggs in the morning , searing in a dry pan , and transfer to oven .

I have options for doing anything , but Hex clad would be one pan for eggs , searing or transfer to oven .

Yea the hex 12 is a perfect one pan solution! I do many one pan scrambles in ours. We have 1-8”, 2-10”, and 1-12” and want a second 12”. The 12” is just right for many things!!! It’s just perfect for 2 rib eye searing!

I think the fry set with one of each with lids is a happy place!

Like Chop said it is a want for me and not a need, I can't get myself to spend that much when what i have "does" the job. Not saying they might be way better than what I have, you don't know what you don't know...lol
