Ground up some chuckie for my own hamburger. Will never go back to store bought. Used Jeff's recipe for meatloaf with following exceptions or variations: No Tabasco, Added sweet yellow bell pepper, and in the last 30 minutes used some secret sauce as a finishing sauce. Oh and I used apple for my smoke.

Formed up and ready for the smoker. Gonna be A LOT of leftovers.

In the smoker.

Ready for the secret sauce.

Well, I guess it isn't a secret anymore. It's the standard by which I and SWMBO compare all other Carolina's and I've seen a bunch here to try out.

30 minute rest.

Ready for dinner.

Thanks for viewing my journey down this smoking path.

I'll take a couple slices over here!

Looks great.

Looks nice. I agree with you about grinding your own meat from chuck. I buy store bought only in a pinch. Home done is much better and you know what's in it.

Nice job.

I'll take a few slices over here too. I'm a fat kid and need more then Jay does. Yes but that meatloaf sure does look good thou. I know I'll wait till tomorrow and get me a sammie

Lookin good Dave. Want to send a couple of slices this way? I would hate for you to have to deal with leftovers.
