I finally got some legit inkbird thermometers and and smoking a whole chicken .... only problem is my camp chef dlx is set at 275 but i put two probes lose in the grill to monitor the temp of the grill it self and its reading 145 max .... is that normal ?

Which inkbird are you using?
 
+1 beat me to it... inkbird default is Celsius.
 
I have not converted to Celsius yet but totally metric now and loving it...
