I have read a lot about smoking chicken.

I have decided to use the Slaughterhouse Poultry Brine.

My question is, do I brine the chickens whole or do I butterfly them before brine?

I'm up late and want to brine before bed.  Just need to know, should I butterfly tonight or tomorrow morning?

Thanks in advance.

Well it's a little late now to answer your question, but it honestly doesn't mater from a quality standpoint. I usually do all my cutting before the brine just because it's easier than dealing with a wet, slippery bird afterwards. You'll be fine either way.

And stock from the bones is better in my humble estimation. I am going to have to try a spatchcocked chicken again some day.

Good point.  I did the cutting before.  I didn't think about handling the chicken after being in the brine.  I just got lucky.  I will cut first brine second going forward.  BTW, the chicken was awesome.  I will build a thread with pictures later tonight,
