Help Please

I don't have a problem with warranties , I just go ahead and fix what needs to be fixed . I am a service tech. for woodworking machinery so I have all the toy's needed to do the repairs or mods if the case may be.

I like the wing sauce from the MES site and it is going to get used again this weekend, come to think of it , it might be good on Texas beef ribs as well. Guess I'll have to do both this weekend to find out. I don't really think there will be a need for gates in the chip tray for longer smokes , I'll just add more pellets.

I was out and about today and found hickory wood bits , their about 1/4" in size so I picked up a bag to try them as well.

I've never cooked any Masterbuilt recipes. For some reason I really never cook recipes that come with cooking appliances that I buy. Probably because years ago the "house" recipes were just too basic.

I believe I could replace MES components if I needed to. I'm just glad I haven't needed to--yet. But you've got a lot more tech skills than I do.

I worked in a shop for about 10 years, and then started my own Cabinet Shop. Had it for over 10 years, until I shut it down to help my Son in his Tower Business.

My Shop was a one man shop, and all my machines were Taiwanese, from Wilke & Grizzly. Great equipment for the price. The other shop I worked in was the same.

I worked around wood in one way or another all my life.

I'm still learning the tricks but decided to try hickory pellets in my wood tray before I bought an AMNPS . I put a handful of pellets in the tray , light them up , blew the flame out after about 5 minutes



and slid it back in place .I smoked a half dozen rib-eye steaks then seered them on the bbq for a minute each side, it worked fantastic. I'm going to use my mes 30 like this for a bit just to make sure it gives me consistently good smoke.

I burned amzn pellets in my MB chip tray once too. I had just gotten wine barrel pellets and trying them for the first time I couldn't keep the AMZNPS lit. ( now think it was because after I blew the flame out I didn't blow on the cherry to get it glowing real good) So I dumped the pellets out of the AMZN into the chip tray (only had one row , doing wings) and they took off smoking after a few minutes. At first it was way too much smoke, but then it settled down. Only smoked the wings for 1 1/2 hrs, but it was still smoking when I was done.
The AMZNPS is the way to go, but it's nice to know that I can use the chip tray in a pinch.

I'll try the wood bits I picked up and post how they work , if they work at lower temperatures , I'll just use them instead of the pellets

The Masterbuilt Users manuals say not to use pellets in the MES.

I'm not sure why, but my guess was always "Maybe they can light up on you during a smoke"???

Like I said I don't know why, but that was my guess, so I would keep an eye on it, being so close to the element.

I hate to Hijack this thread, but I gotta ask you---- did you ever have any dealings with that Table Saw Brake that came out about 10 or more years ago?

The one that stops & drops the blade into the table before it can cut you??

I saw it at a Cabinetmaking Convention. That thing is unbelievable!!!

I believe that's what happened when I tried it. A few minutes after I added them into the chip tray, smoke was shooting wildly out of the exhaust! I opened the door to purge the smoke. After a few more minutes it settled down to a normal looking MES smoke. I didn't taste enough smoke, but my wife said it was perfect for her taste. Don't know if the mild smoke taste was the different taste of the wine barrel pellets(first time using them) or a result of not using the AMZNPS. I'm smoking whole snappers this weekend and using the wine barrel pellets in the AMZN again, so we'll  see how it works out. I'll of course be doing a Qview, so hopefully I'll see you Sunday!

I think whether an MES chip burner flames up or not depends on the distance between the bottom of the chip drawer and the top of the heating element. They are all slightly different.

That seems logical. Do you think that wood pellets are easier to ignite under a heating element than wood chips? I don't know all the goes into the making of high or low quality wood pellets.

I would say Pellets definitely ignite quicker with the same heat.

Only reason I can come up with----And the Sawdust will flame even quicker than the pellets.
