Smoking 19.5lb brisket trimmed down to 15lbs in my pit boss vertical pellet smoker. Placed on smoker @220° around 8:30 last night. Checked at 11:30, 1:30, 4:00 AM, then when I went to check it at 6:00 AM thinking I would be able to wrap the smoker temp was somehow set to 130°. Had two probes in and both were right at 149-152° range. Immediately cranked heat up to 240° to get the smoker back up to temp. Pulled up the analytics on the app and it looks like the smoker lost temp for about 90min. Cooking this ahead of time for a family christmas dinner. Is this brisket still safe to eat?

Also it should be noted I did not inject the brisket, but did mostly separate the point from the flat so I could get more bark on the point for complete separation later for burnt ends.

What’s the best hi/low alarm to purchase that isn’t pit boss related? I can’t get the damn smoker to sync with my phone when I am standing inside the house right inside the smoker, let alone rely on that POS to notify me of a low temp…

Angry purchase of meater block on amazon. Saw it had wifi and could get meat and ambient temperatures from anywhere and went with it…
