help me pulled beef chuck

hey fellas. will be pulling a bit of chuck later in the week for tacos, i've done this a number of times in the WSM no worries but this time I will only have access to a hooded gasser. i have a little smoker tube and a bag of pellets i might throw in for some very light flavor but i'm not really sure how i should set the meat up. usually i just bang it on the rack and wrap with a little liquid at the stall.

at the moment i'm thinking sit her up on a roasting rack uncovered above a pan, then foiling at stall sort of like my usual method in the bullet. should be right but could use some suggestions
 
Nothing changes other than the grills lowest temp may be higher than the smoker. Good luck...JJ
