help me out with a recipe

i always bought prepacked seasonings for summer sausage. i'm looking for the taste of hillshire farms summer sausage. I have everything needed except for the seasonings. I have cure, NFDM, ECA, casings, meat, smoker, scales, thermometers. what's the standard recipe for the typical summer sausage taste/texture. the only thing i don't have is a way to grind coarse spices into fine.

Electric coffee grinders - the type with the whirly food processor type blades - work really well. Except for nutmeg...don't try putting a whole nutmeg nut in one. Just don't.... ;) I've used a Braun grinder for years:

To get close to the HFarms SS you will need ames phos, vitamin c (ascorbic acid) Not the same as ECA, dextrose, isolated soy, corn syrup solids, sodium erythorbate.

However if you want really good SS use a recipe that does not add all the binders and flavor fillers.

LOL!!! I bet that made quite a racket as your grinder gave up the ghost.

Go with a cheap coffee grinder, as mentioned. If you’re changing spice profiles, run some rice through it and wipe it out with a dry paper towel.
