Hello All. I'm relatively new to smoking pork butts, as I previously stuck mostly to brisket and ribs (with good success). I smoked my first butt a few weeks ago for pulled portk, and it turned out great (8lb boneless). I wanted to smoke another for today and started it yesterday evening (now a 9lb bone-in), but it finished WAY faster than anticipated, and I fouled up my anticipated start time (started too early to begin with).

I was planning to have this butt pulled for for a birthday dinner pulled pork today at 5PM, but it was done at 7:30AM (pulled at 205-206*), and now I have to figure out what to do with it. It's currently double wrapped in foil, wrapped in a towel and in a yeti backpack cooler, where it's been hanging out for the last hour.

Is there a sensible way to keep it for dinner today, or should I just have it for lunch, and do something else for dinner?

If your dinner is that far out, I would shred it and put it in the fridge then reheat. Save some of the juices for the reheat. You won't lose any quality IMHO. My $0.02

Thanks. That's what I ended up going with. I pulled it, put it in 2 large ziploks, flattened them out as much as possible to make a thin layer for easy cooling, and put them in the fridge. For basic warming do you have a suggestion?

Shred and reheat either in the oven or keep it warm in a slow cooker pot.

i'm with JC, pull it add some sauce later and heat in the oven.
 
I agree with JC and smokerjim. I will actually do that fairly often if I am in a time crunch the next day, sometimes it almost tastes better reheated.
